Herb Crusted Baked Cod


  • 1 LB Icelandic cod
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 tbsp unsalted butter, melted
  • 1 lemon, juiced
  • ¼ cup breadcrumbs, plain or panko
  • 1 tbsp fresh parsley, finely chopped
  • ½ tbsp fresh chives, finely chopped


Preheat oven to 425. Sprinkle the cod with salt and pepper and place in an oven safe baking dish. Drizzle with half of the butter and lemon juice. Combine bread crumbs and herbs. Coat the top of the fish with the mixture. Drizzle remaining butter and lemon juice. Bake for until the bread crumbs are crisped and the cod flakes easily with a fork,
